I see a color swatch on the category page, customer can click on a different color and sees change immediately without accessing the detail page, which is great.
However my clients work with stock. Are these done with stockable varients?

Investigate the live demo more carefully.

The color swatch on category page has nothing to do with custom fields. If you put additional pictures for any product, those additional pictures are visible on Category page.

Pay attention to this product:

Also, look at the category page and see how this product displayed on category page.
