I have added a load of images via FTP for products & categories, then hit the sync button in VM media section.

All showing up OK, except on every product, I now see underneath the image, the full image name & file extension.

Is this a setting i can switch off somewhere in flexible plugin or via the theme template?
Off topic - but is this a setting i should have set before hitting the sync button?

If nothing to do with flexible plugin or template, is there a way via CSS I can hide this?

A simple CSS display:none; rule should do what you need.
Try to include this CSS rule below to flexibleVM2Global.css file:

You need to find the .THE-CLASS-NAME. Use Firebug and find out what class name "image subtitle" element is using.
