I was wondering if it is possible for the product display module on the first page to show products in 2 rows? Similar to how I have it set up (with a different template) on my site currently (www.uniqbuy.com/electronics)

Unfortunately no. We have used a "Carousel Plugin" for VM - Product Module on SportMArt Template, and this plugin supports only 1 row.

FYI: If you want to get back to original VM Product Module (because original product module supports multiple rows), then find this folder:
/templates/flexible_sportmart/html/mod_virtuemart_product/

and rename it to this:
/templates/flexible_sportmart/html/mod_virtuemart_product2/

(don't forget to clear the joomla cache after this folder change)

But be aware, the layout will look little ugly, because the official VM Product Module doesn't have any aesthetic style at all. You need some CSS touches to make it looks better.
