I would like in the dropdown menu of the child products, the numbers that are out of stock to have different color. For instance gray. Or i would like the shoe numbers to be shown like in the attached photo. In the attached photo the out of stock numbers are shown with gray color

I would be more than happy to help you but what you need is not currently possible with current custom-field plugin that Virtuemart Core provides. In your case, a new custom-field plugin is necessary. This can't be achieved with a template.

Did you check it on google.com? I know there are some 3rd party custom-field plugins available that "might" fulfill your needs.
