Unfortunately i can't provide you step-by step guidance on this, because this is a custom modification. You would need to purchase premium support through www.flexiblewebdesign.com/premium-support and let us take this modification for you.
But if you have basic knowledge on the coding; you can do those modifications by yourself though.

The file you need to make edits is this:
/templates/YOUR_TEMPLATE/html/com_virtuemart/productdetails/default.php
(default.php or flexv2.php which layout you are using currently)

and find the codes to print the "TAB", and do this change:

Make sure you are doing the modification in the correct PHP file.

If you are using "default" layout for product details page, then the PHP file is this:
/templates/YOUR_TEMPLATE/html/com_virtuemart/productdetails/default.php

If you are using "flexv2" layout for the product details page, then the PHP file is this:
/templates/YOUR_TEMPLATE/html/com_virtuemart/productdetails/flexv2.php

I am sorry but i can't provide you any further instruction but my suggestion in my 1st post should be working just fine.
Of course don't forget to move the class="selected" to the one that you want to show off by default.

As i declared in my initial message:

I have provided all the necessary information in my above replies. But Matteo was trying the reverse the order in the SMALL TABs (which includes: Short Description and Specifications) i believe you are trying to apply the same thing to BIG Tabs (which includes: Product description, Reviews, Ask a question etc..) so the location for you to make coding changes is different. (it is still in the same PHP file but the location -line numbers- is different)

Even though i have provided the idea; you can't handle this by yourself if you don't have basic coding knowledge, that's for sure. While attempting, don't forget to BACKUP file in case things won't go as expected.

I am closing this topic as it goes way beyond its purpose.
