I want the Version 1 layout as seen in the demo for my cart. How do I indicate which version to use? I can find flexv2list and flexv2 but nothing referencing version 1 in either the category layout or the product layout.

Then probably your "Categories" have override layouts. You should choose "No override" for each category.
Firstly, make sure you have chosen flexv2 and flexv2list in Virtuemart Configuration



Then,
1- click "Product Categories"


3- From the category list, choose one (you are going to do it or all categories though)

4- scroll down and find "Category Browse Page" and "Default Product Details Page" fields, choose "No Override" for both of them, and click SAVE.


This selection will make that particular category to use the layouts that has been chosen through Virtuemart Configuration.
