The problems you are having in the shopping cart and the ERROR messages are irrelevant.
First of all, to fix the error messages:

open these 3 files:
/plugins/system/vm2_cart/vm2_cart.php
templates/flexible_lightmart/html/mod_vm2cart/default.php
/templates/flexible_lightmart/html/com_virtuemart/cart/default_pricelist.php

and include this line to the top.
- right after <?php

by adding that line above, you are actually saying:
Only report if there is an error in the PHP script, don't show me the the warnings and notifications.

This coding patch should eliminate the error messages. (they are notification messages by the way, not error messages)

About the shopping cart instability , check this:
Navigate to: Virtuemart Backend >> Configuration >> Checkout

and make sure this option is UNCHECKED:
One Page Checkout enabled

If still no luck, check the CACHE settings, make sure you are not using 3rd party cache component. If you want to use CACHE, then use the official built-in cache of Joomla. Also, check this as well:

Find this plugin: "System - Cache" and make sure it is DISABLED, or just disable “Use Browser Caching” parameter in it.
