I have a blog installed on a coolmart templated shop which has been going well for a while. It has just been pointed out to me that is you SHARE a post from the blog it is shown as shared by "Flexible Web Design"

where would it be taking this from please ?

Open this PHP file:
/templates/flexible_coolmart/layouts/template.php

look for this line:
and replace it with this:
Ideally, the LIKE/SHARE buttons should be associated with an Facebook App (i know, it is non-sense but Facebook requires this for some statistical purposes). Otherwise, you might get some trouble in the future (console will also throw an error for missing appId parameter).

If you have already a Facebook account, you can create a blank APP specific to your website very easily via this URL: developers.facebook.com/apps/?action=create (after clicking "Add a New App" button, click the WWW icon)

After creating the APP, Facebook will give you an AppId, just put that appId at the end of the URL, like this:
