How do I turn off some of the product displays such as Featured Products/Top Ten/Latest Product/ etc.

This inquiry doesn't related to our template. It is up to Virtuemart Component to show/hide products in those TABs.

Featured Products; As you might guess, it includes the featured products
Top Ten: It includes the top products that has been viewed
Latest Products: includes the recently added products.

If you want to completely disable some groups (completely disable TOP10, or completely disable LATEST PRODUCTS etc..) then refer to your own topic;
